Cacao Matcha Mint Bites



I absolutely adore these Cacao Matcha Mint Bites! These have been my go-to homemade snack all summer. The minty flavor is so refreshing on hot days, and I can always use a reason to get more chocolate in my day :)

Here are some of the nutritional benefits of these little guys:

* Raw cacao is a great source of magnesium and iron

* Matcha is loaded with antioxidants and provides stable, long-lasting energy * Dates offer fiber and minerals along with their blissful sweetness

* Walnuts are an incredible source of omega 3 fatty acids

Cacao Matcha Mint Bites

yields ~30 bites

1 cup walnuts 5 Tb raw cacao 3 Tb coconut oil 12 pitted deglet dates 1 tsp matcha powder 1/4 tsp salt 1 tsp peppermint flavor (start with 1/2 and taste before you add more- intensity varies by brand) 1 cup coconut flakes (+ more for rolling) 5 tb water (enough to create a sticky “dough”)

Combine all ingredients, except for water, in a food processor or high-powered blender. A food processor will make the process a little easier, but either will work.

Process until you have a semi-smooth dough, adding water by the tablespoon until you reach the right consistency. The dough is done when it sticks together when pinched. Roll into balls (I made mine with about 1 tablespoon of dough each), and then coat in shredded coconut. I added a little bit more matcha to the shredded coconut to get the green color.
